First Course Completed


CULINARY 121 is now behind me. To my surprise, I got an A..... This is very encouraging..... Now for part two.  My final test was a fall harvest plate.

Culinary Training

It's been a lot of reading chapter's, test twice a week. Lots to learn the french way.
I bought new knives. I'm now wearing 3 band aids, ouch!!!!  I have stockd up on band aids.
This week is a mid term test. I haven't been adding to my blogg, cause I'm studing.
I do love the choice I made.
I  plan to be a  pastry/baker chef. Don't need a knife to get the work done.

COOK & HOME WORK


Seems that there's more home work than cooking. I have learned a lot by studing my i-cooking text book.


I learned the 5 mother sauces and learned how to say them in french.


Assignments due this week.


Making a spice chart with info & picture


Making a herb chart with info & picture


I have to write a paper on Auguste Escoffier


Study for a quiz on chapter 6-7 in the I cooking text.


So far I have the herb chart done.


I really do enjoy all of this, it's called feeding my passion.

Culinary Learning

The past two days have been great leaning, training,long days but,feeling good about what your doing.
I'v met some really great talented new friends. There's 3 of us that have become close, just in 2 days, we all have the same passion & love for cooking.We plan to meet for studying prior to class tests.
Our instructors/CHEF's are the best with outstanding back grounds..
Yesterday we made crab/cream cheese stuffed wontons, with a Apricot, ginger dipping sauce.YUM.. All of us ( students ) were so proud. Learning the skills of preping, called in french "Mise en Place" in our terms, getting everything you need to cook in place prior to starting your reciept.

We do have home work. The on cooking textbook must wiegh 30#, it needs to come with wheels.

We also learned, WASH,RINSE,SANTIZE. Water temp 110 degree's. I will take pictures to add to my post as we move forward.

CULINARY SCHOOL PREP.

The time is near!!! Next Wednesday. I picked up my student ID and two Culinary chef jackets. I learned today the chef pants have pant cuffs and they have an elestic band, reason, in case of fire, you can jump out of your pants fast. Wow, something to know!!!!
The chef jacket fits good and looks good, but hot, made of heavy cotton, I guess fire proof... Hoping...
